This week on Basics I’m going to show you how to transform taco night. I’ll show you how to make corn tortillas, different proteins, and garnishes.

Ingredients & Grocery List:
+ For tortillas:
2 cups Masa harina
1 1/4 cups Water
+ For chimichurri and skirt steak:
1 Fresno pepper
2 Tbsp Red wine vinegar
1/4 cup Olive oil
Handful cilantro or parsley
4-5 cloves garlic
Small handful fresh oregano
Salt and pepper
1 skirt steak
+ For the chicken and its marinade:
2 chicken breasts
2 cloves garlic, roughly chopped
2 limes, juiced
Shakes of:
White pepper
Cumin
Smoked paprika
Oregano
Cayenne Pepper
Olive oil
Salt and pepper
+ For the chorizo potato filling:
2 russet potatoes
Dash of white vinegar
2 links of chorizo (casings removed)
Vegetable oil
Salt
Olive oil
+ For the rajas con crema (to accompany the chicken):
3 poblano peppers
1/4 white onion, sliced
Dried oregano
1/4 cup heavy cream
1/2 lime, juiced
Salt and pepper
+ For the pickled radishes (to accompany the chicken):
4 radishes, thinly sliced
2ish cups of apple cider vinegar
Mustard seeds, whole peppercorns, and dill (optional)
+ Other garnishes (to accompany any taco):
Half of one white onion, diced
Cilantro or parsley to taste
One lime, juiced
Cotija or feta cheese
Special equipment:
+ For the tortillas:
Tortilla press or large skillet
Nonstick or cast iron skillet
Gallon size plastic storage bag
+ For the chimichurri:
Food processor
Gallon plastic bag for chimichurri marinade

Anyone know how to check the temperature of the chicken/steak to see if it’s up to temp? When I insert my instant read after flipping, the now top of the meat starts to lower in temp as it’s further from the heat source. Do I just insert it directly into the middle and not worry about the temp of the surface?

I've broken 2 (two!) tortilla presses. They were made of cast aluminium.
Also, they never really made big circles out of my dough, which is why I pressed so hard … and still they were small and thick.
Where do I get a press that works?

Thanks for the Blue Apron example. Anyone who thinks that amount of single use plastic packages for one meal is ok should be ashamed. Will definitely never be using Blue Apron

thats not chorizo! I also recommend to roast the poblano peppers whole. Then put in a plastic bag with a sprinkle of water -will help to skin them easier.

So just a quick PSA from a dietitian here – eating charred peppers' skins will not hurt you in any way, nor is it bad for you. If you like charred peppers, the go for it.

I'd love to see a video about how you keep your kitchen consistently clean. I get overwhelmed with cleaning pretty easily, especially with dishes.
my hypothesis is babish has the soap cilantro gene due to his hatred of the green herb
swapping feta for cotija awful using cotija on these style tacos also kinda weird but id munch tf outta these sincerely a cultured white
One tip, make the tortillas last as it is less awesome as it cools. A fresh cooked tortilla, one cooked 5 minutes ago, and one cooked half an hour before can be very different.
